Pecan Lace Sandwich Cookies With Orange Buttercream Recipe

Ingredients
  • 1/3 c sugar .
  • 1 tsp vanilla extract .
  • 3/4 tsp grated orange peel .
  • 1/3 c all-purpose flour .
  • Cookies .
  • 1 tbsp orange juice .
  • 1 c coarsely ground pecans (about 4 oz) .
  • 1 c powdered sugar .
  • Filling .
  • 2 tbsps light corn syrup .
  • 1/4 c unsalted butter, room temperature .
  • 1/4 c unsalted butter, room temperature

Directions
  • Step #1 For cookies:.
  • Step #2 Position rack in center of oven & preheat to 350°F Line 2 baking sheets with parchment paper.
  • Step #3 Stir butter, sugar, & corn syrup in heavy medium saucepan over low heat/flame until melted & smooth.
  • Step #4 Bring to boil over medium-high heat, stirring constantly.
  • Step #5 Remove from heat.
  • Step #6 Stir in flour.
  • Step #7 Add nuts & vanilla; stir this to mix.
  • Step #8 Drop dough by tspfuls onto prepared baking sheets, spacing 2 inches apart.
  • Step #9 Bake cookies, 1 sheet at a time, until bubbling & lightly browned, about 11 mins.
  • Step #10 Cool on sheets 10 mins.
  • Step #11 Transfer to rack; cool completely.
  • Step #12 For filling:.
  • Step #13 Whisk all ingredients in medium bowl until smooth.
  • Step #14 Spread 1 tsp filling onto bottom of 1 cookie.
  • Step #15 Top with second cookie, bottom side down, pressing lightly to adhere.
  • Step #16 Repeat with remaining cookies.

  • Step #18 Store between sheets of waxed paper in airtight container at about room temp.
