Yankee Pot Roast Recipe

Ingredients
  • 4 lbs chuck roast .
  • 1/2 c fresh parsley, sliced .
  • 6 medium yellow onions, peeled & cut in half .
  • 1 bay leaf .
  • 6 carrots, cut into 1-inch pieces .
  • 4 tbsps butter .
  • 2 garlic cloves, peeled & sliced .
  • 2 tsps whole thyme leaves .
  • 1/8 lb salt pork, cut into 1/8-inch dice .
  • 6 potatoes, peeled & cut in half .
  • 1 turnip, peeled & cut into 1-inch dice .
  • 4 tbsps flour .
  • Kitchen Bouquet (optional)

Directions
  • Step #1 Heat large Dutch oven, about 6-7 quarts, & brown the salt pork (can use bacon).
  • Step #2 Remove the pork from the pan, leaving the fat in the pan.
  • Step #3 Salt & pepper the chuck roast & brown it in the fat.
  • Step #4 Brown it well on both sides, turning it with a wooden fork or spatula so you do not puncture the meat.
  • Step #5 When brown, garlic, add 2 c water to the pot & then the bay leaf, thyme & parsley.
  • Step #6 Cover up & let simmer slowly for 2 hrs, keeping about 1 c of water in the bttom of the pot.
  • Step #7 Add the carrots, onions & turnip; cover & cook for 1/2 hr.
  • Step #8 Watch that there is always a c of water in the bottom of the pot.
  • Step #9 Add the potatoes & cook this until they are tender.
  • Step #10 WATCH THAT WATER! Prepare a roux of the flour & butter by melting the butter in a small frying pan & stirring in the flour.
  • Step #11 Cook for a few mins.
  • Step #12 Remove the meat & vegetables from the pan & place on a serving platter.
  • Step #13 Thicken the gravy with the roux.
  • Step #14 Use as much or as little roux as you like.
  • Step #15 The thickness of the gravy is up to you.
  • Step #16 Correct the seasoning in the gravy & serve the pot roast.
  • Step #17 You may wish to darken the gravy with some Kitchen Bouquet.
