Gluten-free Matzo Balls (kneidlach) - Passover Soup Dumplings Recipe

Ingredients
  • 1 tsp minced fresh dill .
  • 1 tbsp flax seed meal (finely ground flax seeds) .
  • 1/4 tsp white pepper .
  • 1 tbsp chicken fat or vegetable oil or softened margarine .
  • 1 egg .
  • 1/4 c potato starch .
  • 1/4 c finely ground almond meal .
  • 1/4 tsp salt

Directions
  • Step #1 Beat egg with salt & pepper.
  • Step #2 Add remaining ingredients, & mix well.
  • Step #3 Refrigerate for 1 hr.
  • Step #4 Add extra potato starch, if necessary, until the batter is firm enough to be rolled into balls with your hands - It will still be sticky, but not too wet to handle.
  • Step #5 Using clean, dry hands roll a tbsp of dough at a time into balls.
  • Step #6 Submerge in boiling water or soup.
  • Step #7 Allow to cook for approximately 10 mins or until each ball has puffed up a bit & is cooked all the way through.
  • Step #8 For Vegetarian do not use Chicken fat.
