Buttermilk Fudge Recipe

Ingredients
  • 2 c granulated sugar .
  • 1/2 c sliced nuts, if you like nuts it really enhancing Pecans are my favorite (optional) .
  • 1 tsp baking soda .
  • 1/2 c butter .
  • 1 tbsp corn syrup .
  • 1 tsp vanilla extract .
  • 1 c buttermilk

Directions
  • Step #1 Butter sides of a large heavy saucepan or Dutch oven.
  • Step #2 Combine first 5 ingredients in pan & cook over medium-low heat, stirring constantly until butter milts & sugar dissolves.
  • Step #3 Using a pastry brush dipped in hot water, wash down & sugar crystals on side of pan.
  • Step #4 attach candy thermometer to pan, making sure thermometer dose not touch bottom of pan.
  • Step #5 Increase heat to medium & bring to a boil.
  • Step #6 Do not stir while syrup is boiling.
  • Step #7 Continue t cook this until syrup reaches softball stage (Approximately 234 to 240 degrees).
  • Step #8 Test about ½-tsp syrup in ice water.
  • Step #9 Syrup should easily form a ball in ice water but flatten when held in your hand.
  • Step #10 Remove form heat: add vanilla.
  • Step #11 DO NOT STIR until syrup cools to approximately 200 degrees.
  • Step #12 Using a medium speed of an electric mixer, beat fudge until thickened & no longer glossy.
  • Step #13 Stir in nuts.
  • Step #14 Pour into a buttered 8- inch square pan.
  • Step #15 Cool completely.
  • Step #16 Cut into 1-inch squares.
  • Step #17 Store in an airtight container in refrigerator.
