Yummy Vegan Spinach Artichoke Dip Recipe

Ingredients
  • 1/2 yellow onion, sliced .
  • 1 tbsp olive oil .
  • 1/4 tsp cayenne pepper .
  • 3 garlic cloves .
  • 1 (12 oz) package frozen sliced spinach (thawed, drained & squeezed dry) .
  • 2-3 tbsps apple cider vinegar .
  • 1 tsp dried parsley .
  • 1/2 c nutritional yeast flakes .
  • 1 (8 oz) jar marinated artichoke hearts .
  • 1 tsp salt .
  • 1/2 tsp black pepper .
  • 1 tsp dried basil .
  • 1 (12 oz) package firm silken tofu (I dig Mori-Nu)

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Saute onion, spinach & artichoke hearts in olive oil until onion is soft, about 6 mins.
  • Step #3 Blend together tofu, nutritional yeast, garlic, vinegar & spices in mixer until mixed & smooth.
  • Step #4 Combine all ingredients.
  • Step #5 Taste & add extra seasonings & nutritional yeast, as needed.
  • Step #6 Smooth into non-stick baking dish & bake for 15-20 mins, or until lightly browned on top.
  • Step #7 Serve warm with bread or tortilla chips.
