Penne With Zucchini And Ricotta Recipe

Ingredients
  • 4 tsps olive oil .
  • 1/4 c parmesan cheese .
  • 3/4 tsp salt .
  • 2 tsps dried marjoram .
  • 1 minced garlic clove .
  • 8 oz penne pasta .
  • 1 lb zucchini, halved lengthwise & thinly sliced .
  • 1/2 c part-skim ricotta cheese .
  • 3/4 tsp fresh ground black pepper

Directions
  • Step #1 In a large nonstick skillet, heat oil & garlic on medium 2 mins, or until garlic is golden.
  • Step #2 Add zucchini, salt & pepper.
  • Step #3 Cook over med-heat/flame 6-7 mins.
  • Step #4 Meanwhile, cook pasta according to package directions, al dente.
  • Step #5 Drain, reserving 1/2 c cooking water.
  • Step #6 Add penne & reserved cooking water to skillet.
  • Step #7 Add ricotta & Parmesan cheeses & marjoram.
  • Step #8 Toss ingredients in skillet 3 mins over med-heat/flame, or until sauce thickens.
