Blueberry Chantilly Pie Recipe

Ingredients
  • 1 c heavy cream, whipped .
  • 2 tbsps lime juice .
  • 1/2 c sugar .
  • 2 tbsps cornstarch .
  • 9 inches pie crusts, baked .
  • 1 pint fresh blueberries .
  • 1/2 c water

Directions
  • Step #1 Mix together cornstarch & sugar in medium saucepan; stir in the water, lime juice, & 1 c blueberries.
  • Step #2 Cook over med-heat/flame, stirring constantly, until mixture thickens & boils.
  • Step #3 Cool to about room temp.
  • Step #4 Fold in whipped cream & remaining 1 c blueberries into cooled mixture.
  • Step #5 Spoon into shell & chill in the fridge.
  • Step #6 Can be garnished with any remaining blueberries & whipped cream.
