Caramel Cheesecake Recipe

Ingredients
  • 1 tsp vanilla .
  • 1 c sugar .
  • 1/4 c bottled caramel topping .
  • Base .
  • 1 3/4 c corn flakes (crushed) .
  • 125 g butter .
  • 2 eggs .
  • 750 g cream cheese .
  • 1/4 tsp nutmeg .
  • Filling

Directions
  • Step #1 Base.
  • Step #2 Melt butter in pan, remove this from heat.
  • Step #3 Add cornflakes & mix well.
  • Step #4 Press approx three-quarters of mixture on to base & up sides of greased 20cm(8in) springform pan.
  • Step #5 Reserve remainder for topping.
  • Step #6 Refrigerate while preparing filling.
  • Step #7 Filling.
  • Step #8 Beat cream cheese until softened.
  • Step #9 Add sugar, mix well.
  • Step #10 Add eggs one at a time, beating well after each addition.
  • Step #11 Add vanilla, mix well.
  • Step #12 Spoon into prepared crumb crust.
  • Step #13 Pour caramel topping on top, cut lightly into cream cheese mixture with knife to give marbled effect.
  • Step #14 Combine reserved cornflake mixture & nutmeg in bowl, mix well.
  • Step #15 Sprinkle top cornflake & nutmeg mixture over cheesecake.
  • Step #16 Bake in moderate oven 45 mins or until cooked.
  • Step #17 Cool, wrap & seal, freeze.
  • Step #18 To Serve.
  • Step #19 Thaw 2 hrs at about room temp or overnight in refrigerator.
