Vegetable-lentil Stew Recipe

Ingredients
  • 1 c white onions, sliced .
  • 1 tbsp olive oil .
  • 1 whole fennel, sliced .
  • 3 large carrots, peeled & sliced .
  • 1 1/2 c rutabagas, sliced .
  • 2 c butternut squash, sliced .
  • 1 tsp paprika .
  • 1 1/2 tsps cumin .
  • 2 garlic cloves, finely sliced .
  • 2 1/2 c dry green lentils .
  • 4 white potatoes, peeled & sliced .
  • salt & pepper

Directions
  • Step #1 Sauté white onion & garlic in olive oil until translucent.
  • Step #2 Make sure to stir frequently to prevent stickiness & the garlic from burning.
  • Step #3 Add carrots & sauté a few mins longer.
  • Step #4 Add salt, cumin ad paprika, pepper, & stir well.
  • Step #5 Add all other vegetables & lentils & mix well.
  • Step #6 Then add 7 c of water.
  • Step #7 Let it come to a boil, then reduce to simmer for 45 mins.
  • Step #8 Add water if necessary.
  • Step #9 Serve warm.
