Cream Filled Coffee Cake Recipe

Ingredients
  • 2 tsps ground cinnamon .
  • 3/4 c sugar .
  • STREUSEL TOPPING .
  • CREAM FILLING .
  • 1 (1/4 oz) package active dry yeast .
  • 1/3 c sugar, plus .
  • 1 1/4 c milk .
  • 1/4 c sugar .
  • 1/4 c butter .
  • 3/4 c butter or margarine .
  • 3 eggs, well-beaten .
  • 1/4 c packed brown sugar .
  • 1 tbsp salt .
  • 2 tbsps all-purpose flour .
  • 5 1/2-6 c all-purpose flour, divided .
  • 1/4 c butter .
  • 1/4 c warm water (110 to 115) .
  • 3/4 tsp vanilla extract .
  • 3 tbsps confectioners' sugar .
  • 1 tsp sugar, divided .
  • 3/4 c milk .
  • 1/4 c all-purpose flour

Directions
  • Step #1 Heat milk, butter 1/3 c sugar & salt; stir until the sugar dissolves.
  • Step #2 Set aside.
  • Step #3 Mix yeast, warm water & 1 tsp sugar; let this stand 10 mins.
  • Step #4 In a large mixing bowl, mix 3 c flour, milk mixture, yeast & eggs; beat until smooth.
  • Step #5 Add enough of the remaining flour to form a soft dough.
  • Step #6 Turn out onto a lightly floured surface & knead until smooth, about 6-8 mins.
  • Step #7 Place dough in a greased bowl, turning one to grease top.
  • Step #8 Cover up & let rise until doubled, about 1 to 1-1/2 hrs.
  • Step #9 Meanwhile, prepare topping.
  • Step #10 Combine sugars, flour & cinnamon in a bowl.
  • Step #11 Cut butter into dry ingredients; set aside.
  • Step #12 Punch dough down; divide in half.
  • Step #13 Pat or roll each half to fit a greased 9-in.
  • Step #14 cake pan.
  • Step #15 With a fork, pierce entire cake top.
  • Step #16 Divide topping & sprinkle it over each cake.
  • Step #17 Cover up & let rise in a warm place until doubled, about 1 hr.
  • Step #18 Bake at 350° for 20-25 mins.
  • Step #19 Remove from pans & cool on wire racks.
  • Step #20 For filling, mix flour & milk in a saucepan; cook, stirring constantly, until mixture thickens.
  • Step #21 Cool.
  • Step #22 In a mixing bowl, cream remaining ingredients until well-mixed.
  • Step #23 Add flour mixture & beat until fluffy.
  • Step #24 Cut each cake in half horizontally; spread each with half the filling.
  • Step #25 Refrigerate until ready to serve.
