Mexican Chicken Thighs Recipe

Ingredients
  • 3/4 c salsa (any kind) .
  • 3/4 c cheddar cheese, shreeded. (I used mild) .
  • 3 whole green chilies (canned) .
  • 2 skinless chicken thighs

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Place thighs in a coverd casserole dish.
  • Step #3 Slit each green chile down one side so that they open op.
  • Step #4 Place one green chile on each thigh.
  • Step #5 Place the 3rd green chile over the other 2 chiles.
  • Step #6 Pour salsa over chiles & chicken.
  • Step #7 Put a lid on the dish.
  • Step #8 If you don't have a lid, cover with foil wrap.
  • Step #9 Bake for 45 mins or until chicken is done & liquids are hot & bubbly.
  • Step #10 Remove from oven.
  • Step #11 Remove the lid/foil wrap.
  • Step #12 Sprinkle top the cheddar cheese over the chicken & chiles.
  • Step #13 Replace the lid/foil wrap & return it to oven.
  • Step #14 Bake for an extra 10-15 mins or untl cheese is melted & the liquid is hot & bubbly.
  • Step #15 Remove from oven.
  • Step #16 The juices from the dish can be used to pour over rice.
  • Step #17 This makes the rice taste really good! Serve hot.
