Banana Cream Crepe Filling Recipe

Ingredients
  • 4 tsps cornstarch .
  • 1 1/2 tsps vanilla .
  • 1/3 c sugar .
  • 2 egg yolks .
  • 1 tbsp butter .
  • 1 dash salt .
  • 2 c milk .
  • 3 tbsps all-purpose flour .
  • 1 large banana, sliced or 2 small bananas, sliced

Directions
  • Step #1 Combine flour, cornstarch, sugar, & salt in a small saucepan.
  • Step #2 Add milk slowly.
  • Step #3 Cook, stirring, over low heat/flame until thickened.
  • Step #4 (Do not rush this stage as it gets rid of the raw flour flavor).
  • Step #5 Blend a little of the hot mixture into egg yolks.
  • Step #6 Stir yolks into saucepan.
  • Step #7 Cook 1 min.
  • Step #8 Remove from heat.
  • Step #9 Add vanilla & butter.
  • Step #10 Cool.
  • Step #11 When ready to serve fold in sliced bananas.
  • Step #12 Place a small amount of filling on each crepe & roll.
