Shredded Beef Enchiladas Recipe

Ingredients
  • 1 (10 oz) can sliced tomatoes & green chilies (Rotel) .
  • 6-8 flour tortillas .
  • 1/4 c milk .
  • 1 1/2 c shredded beef .
  • 2 (10 3/4 oz) cans cream of mushroom soup .
  • 2 c cheddar cheese, divided .
  • 1 c sour cream

Directions
  • Step #1 Combine soups, sour cream & Rotel tomatoes.
  • Step #2 Reserve 1 3/4 c & set aside.
  • Step #3 To remaining sauce, add shredded beef & 1 c cheddar cheese.
  • Step #4 Stir.
  • Step #5 Fill flour tortillas & put in greased casserole dish.
  • Step #6 Put 1/4 c milk in the set aside sauce.
  • Step #7 Spoon extra sauce mixture over tortillas.
  • Step #8 Bake uncovered 20 mins at 350 degrees.
  • Step #9 Top with remaining cheese & bake 10 more mins.
