Spicy Chicken And Rice Casserole Recipe

Ingredients
  • 1 1/2 c uncooked rice (NOT Minute rice) .
  • 1 (10 3/4 oz) can creamy chicken verde soup .
  • 1 1/2 c shredded monterey jack pepper cheese .
  • 4 c chicken broth .
  • 2-3 c shredded cooked chicken .
  • 1 (10 3/4 oz) can chicken & rice soup

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 Place shredded chicken evenly in a 9x13 dish.
  • Step #3 Top with rice & then cheese.
  • Step #4 Mix the remaining ingredients well & pour over chicken, rice & cheese.
  • Step #5 (This is going to look VERY runny--it is supposed to.
  • Step #6 It all cooks down & cooks the rice.
  • Step #7 This is why you cannot use Minute Rice).
  • Step #8 Cover up with foil wrap & bake for one hr.
  • Step #9 Remove the foil wrap & bake 30 mins longer, or until all liquid is absorbed.
