Mushroom Soup Recipe

Ingredients
  • 2 tbsps sweet sherry .
  • nutmeg .
  • 1 tbsp fresh thyme, sliced .
  • cream .
  • 500 g mushrooms, sliced (best if you use a mix) .
  • 1 1/2 c vegetable stock or chicken stock .
  • 2 onions, sliced finely .
  • 60 g butter .
  • 3/4 c dry white wine .
  • salt & pepper .
  • 1-2 tbsp almond meal, to thicken (about 1-2 tbsp)

Directions
  • Step #1 Melt butter in saucepan & soften onions.
  • Step #2 Add mushrooms & thyme, cover & cook slowly until mushrooms collapse.
  • Step #3 Stir, increase heat, uncover & add wine & sherry & let simmer for about 10 mins.
  • Step #4 Add preferred stock & season to taste.
  • Step #5 Simmer for 15 mins.
  • Step #6 Puree in food processor/blender until smooth then return to pan.
  • Step #7 Add almond meal for a little thicker texture.
  • Step #8 Add desired amount of cream.
  • Step #9 More or less depending how rich you want it.
  • Step #10 Reheat carefully.
  • Step #11 Sprinkle top with nutmeg when serving.
