Easy Salmon Cakes Recipe

Ingredients
  • 1 c frozen peas, thawed .
  • 1/2 c chutney .
  • 3/4 c instant potato flakes .
  • 2 tsps curry powder .
  • vegetable oil cooking spray .
  • 1 (10 oz) box couscous, prepared according to package directions .
  • 2 eggs .
  • 1 (14 3/4 oz) can red salmon

Directions
  • Step #1 Heat oven to 400F degrees.
  • Step #2 Line a baking sheet with foil wrap.
  • Step #3 In a small bowl, stir this together curry powder & potato flakes.
  • Step #4 Place salmon in a medium bowl & remove skin & bones.
  • Step #5 Stir eggs with 1/4 c of the seasoned potato flakes into salmon & mix well with a fork.
  • Step #6 Shape mixture into 8 cakes & coat with remaning seasoned potato flakes.
  • Step #7 Coat both sides of salmon cakes with cooking spray; place on foil wrap lined baking sheet.
  • Step #8 Bake for 15 mins.
  • Step #9 Meanwhile, puree chutney in a mixer.
  • Step #10 Stir peas into hot couscous.
  • Step #11 Serve cakes with sauce & couscous with peas.
