Gingerbread With Pears Low Fat & Low Calorie Recipe

Ingredients
  • 1 c low-fat buttermilk .
  • 1 c cake flour .
  • 1 pinch ground cloves .
  • 1 large egg .
  • 1 tsp baking soda .
  • 1/2 tsp salt .
  • 1 tsp baking powder .
  • 1/2 c Splenda granular, Granular for baking .
  • 1/2 lemon, juice of .
  • 2 tsps cinnamon .
  • 3 (6 oz) pears, ripe but firm, Bosc recommended .
  • 1/4 c light olive oil .
  • 1 c whole wheat pastry flour .
  • 1/4 c molasses .
  • 2 tsps ground ginger .
  • 2 tbsps sliced crystallized ginger .
  • 1 tsp brown sugar

Directions
  • Step #1 Partially fill a bowl with water & add lemon juice.
  • Step #2 Peel the pears & cut them into quarters.
  • Step #3 Chop 2 pears into a small dice & place the pieces in the lemon water.
  • Step #4 Slice each quarter of the 3rd pear in 4 long pieces.
  • Step #5 Place them in the water.
  • Step #6 Heat oven to 350ºF.
  • Step #7 Coat a 9"-X-13" baking dish with cooking spray & dust lightly with flour.
  • Step #8 Combine the oil, egg, buttermilk & molasses in medium bowl.
  • Step #9 In a large bowl, baking powder & soda, cinnamon, whisk the flours, salt, Splenda, ground ginger & cloves.
  • Step #10 Add the wet ingredients & mix carefully.
  • Step #11 Drain the pears & set long slices aside.
  • Step #12 Stir the sliced pear pieces & the sliced ginger into the batter.
  • Step #13 Pour batter into prepared pan.
  • Step #14 Arrange long pear slices on top & sprinkle with brown sugar.
  • Step #15 Bake for 25 mins.
  • Step #16 Serve warm or at about room temp.
