Champion Chili (vegan) Recipe

Ingredients
  • 1 bell pepper, sliced .
  • 1 c dry textured vegetable protein (TVP) .
  • 1 c boiling water .
  • 3 tbsps chili powder (or more to taste) .
  • 1 (15 oz) can kidney beans or pinto beans or black beans .
  • 2 (16 oz) cans sliced tomatoes .
  • 1 tsp dried oregano .
  • 1 jalapeno pepper, minced .
  • 2 tsps cumin .
  • 1 large onion, coarsely sliced .
  • 1 c frozen corn .
  • 2 tsps garlic powder .
  • 1 zucchini, sliced .
  • 1 (3 oz) can tomato paste .
  • 2 carrots, sliced

Directions
  • Step #1 Pour the boiling water over the TVP & let sit for 5 mins.
  • Step #2 Combine with the remaining ingredients except the beans.
  • Step #3 Cover up & let simmer for 1 hr.
  • Step #4 Add the beans & let simmer for an extra 30 mins.
