Butter-mint Shortbread Recipe

Ingredients
  • 1/2 tsp vanilla extract .
  • 3/4 c powdered sugar .
  • 1/2 tsp mint extract .
  • 2 tbsps powdered sugar, to garnish .
  • 2 c all-purpose flour .
  • 1 c butter, softened

Directions
  • Step #1 Preheat oven to 325.
  • Step #2 Beat butter & 3/4 c powdered sugar at medium speed in mixer, until fluffy & light.
  • Step #3 Add extracts & beat until mixed.
  • Step #4 Add flour slowly, beating at lowish speed until mixed after each addition.
  • Step #5 Pat dough into large (approximately 15x10) rectangle on a baking sheet lined with parchment paper.
  • Step #6 Bake at 325F for 18-20 mins, or until lightly browned.
  • Step #7 Cool in pan on wire rack for 10 mins.
  • Step #8 Cut into squares & sprinkle with powdered sugar.
