Cilantro Lime Steak Tacos Recipe

Ingredients
  • 2 c lettuce, sliced (use remaining Romaine) .
  • 2 limes, juice of .
  • 8 large romaine lettuce leaves (whole, washed & dried) .
  • 2 tbsps onions, sliced .
  • 1 c sliced tomatoes .
  • 1 1/2 lbs flank steaks .
  • salsa, your choice .
  • 1 tsp salt .
  • 2 limes, cut in wedges .
  • 1 c fresh cilantro, sliced .
  • 2 c low-fat cheddar cheese, shredded .
  • 1/2 tsp pepper

Directions
  • Step #1 Prepare marinade for steak by using the juice from 2 limes, pepper, salt, cilantro & sliced onion.
  • Step #2 Place all these in a plastic zip top style bag along with flank steak.
  • Step #3 Refrigerate for at least 8 hrs or overnight.
  • Step #4 Preheat grill, bbq, George Foreman or oven broiler.
  • Step #5 Grill steaks over coals for about 4-6 mins per side.
  • Step #6 Let it rest a few mins before cutting steak into slices about 1/8-1/4 inch thick.
  • Step #7 Cut remaining limes in half.
  • Step #8 Using the Romaine lettuce leaves, steak strips, tomatoes, fill with the remaining shredded Romain lettuce, cheese & salsa.
