Spicy Vegetable Hummus Recipe

Ingredients
  • 1/4 c fat-free ricotta cheese or part-skim ricotta cheese .
  • 1 (15 oz) can garbanzo beans, drained .
  • 2 tbsps green peppers, minced .
  • 2 garlic cloves, minced .
  • 1 tbsp cucumbers, sliced finely .
  • 1/4 c tahini .
  • 2 tbsps carrots, sliced finely .
  • red pepper flakes .
  • 1 tbsp lemon juice .
  • 1 tsp sesame oil .
  • 1/4 tsp chili powder .
  • 1/2 tsp paprika .
  • 2 tbsps green onions, minced .
  • 1 tsp ground cumin .
  • 1 tbsp fresh parsley, sliced finely .
  • black pepper

Directions
  • Step #1 In a medium bowl, mash the garbanzo beans to your desired texture with a potato masher.
  • Step #2 A fork would also work.
  • Step #3 Add lemon juice, sesame oil, tahini, & ricotta.
  • Step #4 Mix well.
  • Step #5 Combine garlic, spices, & vegetables with hummus mixture (you may want a bit more or less of each of these depending on your tastes).
  • Step #6 Add black & red pepper to taste.
  • Step #7 Serve with pita & fresh vegetables.
