That's Grrrreat Granola! Recipe

Ingredients
  • 1/2 c corn oil or canola oil .
  • 6 c rolled oats .
  • 1/3 c tart dried cherries .
  • 1 1/2 tsps ground cardamom .
  • 1 tbsp pure vanilla extract (NOT imitation) .
  • 3/4 c raw sunflower seeds .
  • 1/3 c raisins .
  • 1 c walnuts or almonds, sliced coarsely .
  • 1 c wheat germ .
  • 1/4 c honey (I used orange blossom flavored honey) .
  • 1 1/2 tbsps ground cinnamon .
  • 1/4 c brown sugar or unbleached cane sugar ("Sucanat") .
  • 1/3 c dried strawberries

Directions
  • Step #1 Preheat oven to 325F degrees.
  • Step #2 In a large mixing bowl, mix the oats, wheat germ, sunflower seeds, walnuts or almonds, cinnamon & cardamom.
  • Step #3 In a heatproof glass bowl, microwave the oil, honey & brown sugar for 1 min.
  • Step #4 Stir in vanilla extract.
  • Step #5 Stir oil/honey mixture into oatmeal mixture & mix well.
  • Step #6 (The mixture will not be very moist.
  • Step #7 ).
  • Step #8 Divide & spread the oatmeal mixture onto 2 baking sheets.
  • Step #9 Bake in preheated oven for about 40 mins; check the granola periodically & stir this to avoid burning.
  • Step #10 Bake an extra 15-20 mins or until medium golden brown.
  • Step #11 Turn off heat & allow granola to cool in oven.
  • Step #12 Stir in the dried fruit.
  • Step #13 If necessary, add more cinnamon or cardamom, to taste.
  • Step #14 Store granola in airtight container & put in the fridge.
