Step #1 Heat oven to 160oC (150oC fanbake), with the rack just below the middle.
Step #2 Measure the first five ingredients into a food processor/blender or large bowl.
Step #3 Pour 1/2 c warms water into a one c measure, stir in the the salt & sugar until dissolved, then add the oil.
Step #4 Process the dry ingredients in bursts (or toss them together with a fork), while you add the hot liquid mixture in a steady stream.
Step #5 Add as much of the remaining hot water as you need to form a ball of soft dough.
Step #6 Cut the dough into four parts & put three aside in a plastic bag.
Step #7 Roll out the other piece VERY thinly on a floured board, using extra flour to stop it sticking, making an oval shape bigger than an A4 size page.
Step #8 Cut in half (lengthwise), thin (pennant shaped) triangles, then cut each half into 10-12 tall, with alternate narrow bases & points on the cut edge.
Step #9 Perfect shapes aren't necessary & outside edges need not be trimmed.
Step #10 Prick crackers with a fork or skewer, Place on a metal cake rack to bake, crumpling but not folding them.
Step #11 Bake them on the rack for 10-15 mintues, until pale gold but dry & very crisp.
Step #12 Lower heat & cook longer if necessary.
Step #13 Repeat with remaining pieces of dough.
Step #14 When cold, store this in airtight containers, reheating if crackers soften or storage.
Step #15 Flavour develops fully after about 12 hrs.
