Shrimp Marinara In The Crockpot
Ingredients
1 lb large shrimp (tail left on) .
salt & freshly ground black pepper .
2 garlic cloves, sliced .
3 (16 oz) cans cannellini beans or great northern beans, drained & rinsed .
1/4 c olive oil .
SHRIMP .
1/2 c basil, coarsely sliced .
1 1/2 tbsps lemon juice .
2 tbsps Italian parsley, sliced .
1/2 c sliced onions .
1/2 tsp oregano .
best-quality extra-virgin olive oil, for drizzling .
1/4 tsp pepper .
BEANS .
1/3 c red wine vinegar .
4 garlic cloves, sliced .
1 c tomatoes, peeled, seeded & sliced .
1/2 tsp red pepper flakes
Directions
Step #1 Combine all bean ingredients & heat on medium low.
Step #2 While the beans are simmering, heat 1/4 c oil In a large-ish skillet over high heat.
Step #3 Add the shrimp, season this with salt & cook for about 1-3 mins, tossing frequently until shrimp turns pink & begins to curl.
Step #4 Don't overcook! If you using pre-cooked shrimp, you basically are just browning them a bit.
Step #5 Remove the shrimp to a bowl.
Step #6 Add the garlic to the pan & saute until the garlic browns.
Step #7 Add the pepper flakes & cook for 1 min.
Step #8 Add the tomato & basil & stir briefly, then add the lemon juice.
Step #9 Spice up with salt & pepper.
Step #10 Cook for about 1 min, & then stir in the the shrimp.
Step #11 Toss well & cook briefly to reheat the shrimp.
Step #12 Spoon the white beans on a platter or individual plates.
Step #13 Drizzle with the best olive oil you have.
Step #14 Top with shrimp mixture.
Step #15 Sprinkle top with parsley.
