Italian Chicken Enchiladas Recipe

Ingredients
  • 8 oz cooked chicken breasts (2 halves, roasted) .
  • 3 tomatoes, halves (dried oil-packed) .
  • 1 (15 oz) jar marinara sauce .
  • 1 green onion, sliced .
  • nonstick cooking spray .
  • 6 (6 inch) flour tortillas .
  • 1 c shredded mozzarella cheese or monterey jack cheese (4 oz)

Directions
  • Step #1 In a small saucepan, heat sauce until heated through.
  • Step #2 Meanwhile, remove bones from chicken; cut meat into bite-size strips.
  • Step #3 Finely chop dried tomatoes.
  • Step #4 Toss together the chicken, 1/2 c of the cheese, tomatoes, & green onion.
  • Step #5 To assemble enchiladas, coat a 2-quart rectangular baking dish with nonstick cooking spray.
  • Step #6 Spread 2 tbsps pasta sauce over bottom of dish.
  • Step #7 Spoon about 1/4 c of chicken mixture just below center of each tortilla.
  • Step #8 Roll up.
  • Step #9 Place seam-side down in dish.
  • Step #10 Repeat with remaining chicken mixture & tortillas.
  • Step #11 Pour remaining pasta sauce over enchiladas.
  • Step #12 Sprinkle top with remaining cheese.
  • Step #13 Bake in a 400°F oven for 20-25 mins or until heated through & cheese is melted.
  • Step #14 If desired, garnish sliced green onions.
