Tuna Pomodoro Recipe

Ingredients
  • 1 c red onions, sliced .
  • 1-2 tbsp italian seasoning .
  • 2 (6 oz) cans tuna in olive oil .
  • 2 tbsps garlic, sliced .
  • crushed red pepper flakes, to taste (optional) .
  • 2 tbsps fresh flat-leaf parsley, shaved .
  • 2 tbsps pepperoncini peppers, sliced (optional) .
  • salt, to taste .
  • 2 tbsps manchego cheese, shredded .
  • 1 c yellow bell peppers, sliced .
  • ground coarse black pepper, to taste .
  • 1 tbsp olive oil .
  • 3 c roma tomatoes, sliced .
  • 12 oz spaghetti or linguine

Directions
  • Step #1 Sauté red onions & garlic in olive oil until onions are translucent.
  • Step #2 Add tomatoes, olives, pepperoncini, Italian seasoning, & bell peppers; sauté over med-heat/flame for an extra 3 mins.
  • Step #3 Add tuna & let simmer for 4-6 mins till hot throughout.
  • Step #4 Serve over pasta cooked according to package directions & garnish with parsley & manchego.
