Balsamic Glazed Chicken And Bell Pepper Sandwiches Recipe

Ingredients
  • 1/2 tsp salt, divided .
  • 1 1/4 lbs chicken breast tenders .
  • 4 tsps olive oil, divided .
  • 4 oz provolone cheese, thinly sliced .
  • 16 oz focaccia bread (2 8oz loaves) .
  • 1/2 c balsamic vinegar, divided .
  • 1/8 tsp black pepper .
  • 2 c onions, vertically sliced (about 1 large) .
  • 2 c red bell peppers, cut into strips (about 2 medium)

Directions
  • Step #1 Heat 2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Sprinkle top 1/4 tsp salt over chicken.
  • Step #3 Add chicken to pan; cook 1 min on each side or until lightly browned.
  • Step #4 Add 1/4 c vinegar; cook 2 mins or until chicken is done & vinegar is syrupy.
  • Step #5 Remove chicken mixture from the pan; cover & keep warm.
  • Step #6 Wipe pan clean with a paper towel.
  • Step #7 Return pan to medium-high heat; add in the remaining 2 tsps oil.
  • Step #8 Add bell pepper & onion; sauté 7 mins or until tender.
  • Step #9 Stir in remaining 1/4 tsp salt & remaining 1/4 c vinegar; cook 1 min or until vinegar is syrupy.
  • Step #10 Cut foccaccia loaves in half horizontally.
  • Step #11 Arrange chicken mixture evenly over bottom halves of bread; top this with bell pepper mixture.
  • Step #12 Arrange cheese over pepper mixture, & sprinkle with black pepper.
  • Step #13 Top with top halves of bread.
  • Step #14 Place a cast-iron or heavy skillet on top of sandwiches; let this stand 5 mins.
  • Step #15 Cut each sandwich into 6 wedges.
