Spinach, Rice & Feta Pie Recipe

Ingredients
  • 2 tsps all-purpose flour .
  • 2 c long-grain rice, cooked .
  • 1/2 tsp salt .
  • 2 tbsps parmesan cheese, grated .
  • 2 tsps butter .
  • 2 large egg whites .
  • 1 1/2 c skim milk .
  • 1 large egg, lightly beaten .
  • 3/4 c onions, sliced .
  • 1/4 tsp pepper .
  • olive oil flavored cooking spray .
  • 3 oz feta cheese, crumbled .
  • 10 oz frozen sliced spinach, thawed & drained

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Melt butter In a large-ish skillet over med-heat/flame.
  • Step #3 Add sliced onion & saute for 3 mins.
  • Step #4 Stir in flour, salt & pepper.
  • Step #5 Gradually add milk, stirring with a whisk until well mixed.
  • Step #6 Bring mixture to a simmer & cook for 1 min or until slightly thick, stirring constantly.
  • Step #7 Remove skillet from heat & stir in the the cooked rice, egg, feta cheese, egg whites & spinach.
  • Step #8 Pour mixture into a 9 inch pie plate coated with cooking spray.
  • Step #9 Sprinkle top Parmesan cheese over pie.
  • Step #10 Bake for 35 mins or until set.
  • Step #11 Broil for 2 mins or until pie is golden brown.
