Apricot Raisin Sour Cream Pie Recipe

Ingredients
  • 1 tsp vanilla extract .
  • 1 deep dish pie shell .
  • 1 orange, zest of, finely sliced .
  • 1/4 c all-purpose flour .
  • 1/2 c dark raisins .
  • 2 c sour cream .
  • 2 c water, boiling .
  • 1 c granulated sugar .
  • 2/3 c dried apricots, packed, quartered .
  • 2 eggs .
  • 1/4 tsp salt

Directions
  • Step #1 Roll out & line a 9" or 10" deep dish pie plate, then chill until filling is ready.
  • Step #2 Put raisins in small bowl & cover with boiling water.
  • Step #3 Set aside to plump for 20 mins.
  • Step #4 Preheat oven to 400F degrees F.
  • Step #5 Put quartered apricots in saucepan & cover with water.
  • Step #6 Cover up pan, bring to boil, then lower heat & simmer 10 mins.
  • Step #7 Drain apricots & set aside.
  • Step #8 In mixer bowl, beat together the last 7 ingredients.
  • Step #9 Drain raisins & add both them & apricots to sour cream mixture, stirring well.
  • Step #10 Pour into pie shell & bake in lower 1/3 of oven 40-45 mins or until light golden on edges, & knife inserted 1" from edge comes out clean.
  • Step #11 Cool on wire rack, then serve at about room temp.
