Emeril's Kicked Up Jambalaya Recipe

Ingredients
  • 3 bay leaves .
  • 1 whole chicken, cut into 8 pieces .
  • 1/4 tsp cayenne pepper .
  • 1 1/2 tbsps sliced thyme leaves .
  • salt & pepper .
  • 1 1/2 lbs andouille sausages, cut into 1/2-inch cubes .
  • 1/4 c olive oil .
  • emerils creole seasoning .
  • 1 c sliced green onions .
  • 1 c sliced bell peppers .
  • 2 tbsps minced garlic .
  • 2 c rice .
  • 1 c sliced celery .
  • 1 lb medium shrimp, peeled & deveined .
  • 6 c water .
  • 1 c sliced tomatoes .
  • 1/2 c sliced parsley .

  • 2 c sliced onions

Directions
  • Step #1 In a large Dutch oven, heat 2 tbsps of the olive oil over medium high heat.
  • Step #2 Spice up shrimp with Creole seasoning & saute until almost cooked through, about 4 mins.
  • Step #3 Using a slotted spoon, remove shrimp & set aside until later.
  • Step #4 Spice up chicken pieces with Creole seasoning.
  • Step #5 Add remaining olive oil to Dutch oven & when hot, add chicken pieces & saute until browned on both sides, about 8 mins.
  • Step #6 Remove & set aside.
  • Step #7 Add sausage & cook this until browned.
  • Step #8 Add onion, cayenne & thyme & cook this until vegetables are wilted, bell pepper, garlic, bay leaves, celery, about 6 mins.
  • Step #9 Add tomatoes & water & return chicken pieces to pot.
  • Step #10 Spice up with salt & pepper & let simmer, covered, for 20 mins.
  • Step #11 Add rice to pot, stir well & return to a boil.
  • Step #12 Reduce heat to low, cover pot, & cook for 15 mins.
  • Step #13 Add shrimp, green onions & parsley to Dutch oven, & continue to cook, mixing carefully, covered, for another 10 mins.
  • Step #14 Remove from heat & let sit 10 mins before serving.
