Grilled Mussels With Shallot Sauce Recipe

Ingredients
  • 1/8 tsp pepper .
  • 1/3 c fresh parsley, coarsely sliced .
  • 2 tbsps olive oil .
  • 1/3 c red wine vinegar .
  • 2 lbs fresh mussels .
  • 2 tbsps shallots, finely sliced .
  • 1/8 tsp salt .
  • 1/2 c lemon juice, divided

Directions
  • Step #1 Whisk together shallots, red wine vinegar, 1/4 c of the lemon juice & the olive oil in a small bowl.
  • Step #2 Lightly coat a grill wok or grill basket or aluminum foil wrap lined grill rack with nonstick cooking spray.
  • Step #3 Preheat grill to medium high heat.
  • Step #4 Scrub mussel shells with a stiff brush, removing beards.
  • Step #5 Discard any opened shells.
  • Step #6 Sprinkle top mussels with salt, pepper, & remaining lemon juice.
  • Step #7 Place on the grill wok, grill basket or grill rack.
  • Step #8 Grill mussels, covered with grill lid, 7-10 mins or until shells open.
  • Step #9 Discard & unopened shells.
  • Step #10 Transfer mussels to a large dish & pour the shallot mixture over the mussels, stirring carefully to coat; sprinkle with parsley.
  • Step #11 Serve as soon as possible.
