Butternut Squash Ravioli Recipe

Ingredients
  • extra virgin olive oil .
  • parmesan cheese .
  • salt & pepper .
  • 1 small butternut squash .
  • wonton wrappers

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Wash squash & place on a baking sheet, roast for 45 mins, test for doneness by piercing with fork.
  • Step #3 Scoop out flesh, discard seeds.
  • Step #4 Mash squash with a fork & season this with salt & pepper.
  • Step #5 Assemble ravioli by placing 1/2 tablesoon of filling on wonton wrapper, seal with water to form a triangle.
  • Step #6 Bring pot of water to a boil, season this with salt & oil.
  • Step #7 Cook raviolis in water, when they rise to the top they are done.
  • Step #8 Top with olive oil & parmesan cheese.
