Mussels In Red Sauce Recipe

Ingredients
  • 1 tbsp garlic, minced .
  • 1 1/2 c white wine .
  • 1 tsp salt .
  • 1 large onion, sliced .
  • 4 lbs mussels, live, cleaned & rinsed .
  • 1/2 tsp pepper .
  • 2 tbsps oil .
  • 2 (28 oz) cans tomatoes with juice .
  • 4 carrots, coarsely sliced

Directions
  • Step #1 Pour juice from tomatoes into a bowl; chop tomatoes, do not puree.
  • Step #2 Add the sliced tomatoes to the bowl & set aside.
  • Step #3 In a stock pot, heat oil over med-heat/flame.
  • Step #4 Add carrots, onion & garlic.
  • Step #5 Saute for 4 mins.
  • Step #6 Add wine, tomatoes, salt & pepper.
  • Step #7 Bring to a boil.
  • Step #8 Add mussels; cover & cook for 5 mins.
  • Step #9 Shake pot to ensure even cooking.
  • Step #10 When mussels have opened, they are done.
  • Step #11 Discard any that haven't opened.
