Slow Roasted Fire Salsa Recipe

Ingredients
  • 1 tbsp brown sugar .
  • 1 jalapeno pepper .
  • olive oil .
  • 3 bulbs of garlic .
  • 3-4 tomatoes .
  • salt .
  • 2 tsps balsamic vinegar .
  • 4 red peppers .
  • 2 cinnamon sticks

Directions
  • Step #1 Pre heat oven on bake to 300'.
  • Step #2 Cut tomatoes in half & brake cinnamon sticks into pieces about 3 per stick & cut tops off of garlic.
  • Step #3 Brush or spread oil over garlic, tomatoes, peppers, & jalapeno.
  • Step #4 Lightly pierce the cut tops of the tomatoes with cinnamon pieces until the sticks are almost covered by the tomato.
  • Step #5 Make sure not to pierce through the bottom.
  • Step #6 Lightly salt everything.
  • Step #7 Place ingredients on a baking dish tomatoes open side up, place so they are spread out (not touching) & place this in oven.
  • Step #8 Bake for about 3 hrs turning peppers every once in awhile until everything is browned.
  • Step #9 Remove from heat & let cool.
  • Step #10 Place peppers in a brown bag to sweat so peels will fall off & remove seeds.
  • Step #11 Remove garlic cloves from bulbs & cinnamon sticks from the tomatoes.
  • Step #12 Place all the roasted ingredients In a large-ish bowl & add in the remaining sugar, & vinegar.
  • Step #13 Mash or mix until smooth & salt as desired.
