Stewed Green Beans - South African Farm Recipe Recipe

Ingredients
  • 1/3 tsp salt (to taste) .
  • 1 onion, any kind .
  • 1/3 tsp sugar .
  • butter, to taste .
  • 1/3 tsp white pepper (to taste) .
  • 12 oz green beans .
  • 1 medium potato .
  • 1/3 tsp nutmeg, to taste (optional)

Directions
  • Step #1 Wash & tail beans.
  • Step #2 Please note that you could use more; the quantity doesn't matter.
  • Step #3 If you're cooking for more than 4 people, use a lb of beans & maybe 2 potatoes.
  • Step #4 Holding together a little heap of about 6 - 8 beans at a time, chop them crosswise into thin rounds.
  • Step #5 Carry on until all the beans have been cut.
  • Step #6 Put in a pot, & slice the peeled potato over the beans.
  • Step #7 Peel the onion, slice, & add to pot.
  • Step #8 You don't have to mix the vegetables.
  • Step #9 Add about 1/3 c water & the sugar.
  • Step #10 Bring to the boil, lower heat, put lid on, & let the whole lot simmer until everything is very soft.
  • Step #11 Using one of those utensils (name?)which you use to mash any vegetable roughly, mash the beans, potato & onion until it is mushy.
  • Step #12 If there is too much liquid in the pot, drain off carefully.
  • Step #13 Spice up with salt, white pepper & nutmeg.
  • Step #14 Of course you could use black pepper instead.
  • Step #15 People like adding a good knob of butter: I usually do not because it's hardly necessary.
  • Step #16 Serve as a side dish.
