Ingredients
  • 1/2 c light mayonnaise .
  • salt & pepper .
  • 2 (8 7/8 oz) envelopes pre-cooked long grain & wild rice mix .
  • 1 tbsp butter .
  • 2 tbsps shredded parmesan cheese (optional) .
  • 1 (10 oz) can sliced tomatoes with lime & cilantro (well drained) .
  • 1 1/2 lbs salmon fillets (no skin) .
  • 1 (10 oz) bag fresh spinach

Directions
