2 (8 7/8 oz) envelopes pre-cooked long grain & wild rice mix .
1 tbsp butter .
2 tbsps shredded parmesan cheese (optional) .
1 (10 oz) can sliced tomatoes with lime & cilantro (well drained) .
1 1/2 lbs salmon fillets (no skin) .
1 (10 oz) bag fresh spinach
Directions

Step #3 Cut salmon into 4 servings; season this with salt & pepper.

Step #6 Preheat large saute pan on medium-high 2-3 mins.

Step #16 Place spinach & butter in microwave-safe bowl.

Step #19 Stir in rice & microwave 4 more mins.

Step #21 Let stand 2 mins, sprinkle with cheese, if using, & serve.
