Eggnog Coffee Cake Recipe

Ingredients
  • 1 1/2 tsps vanilla extract .
  • 1 tsp baking powder .
  • Topping .
  • 1 1/4 c sugar .
  • 1/4 c sugar .
  • 2 c flour .
  • 1 1/4 c pecans, broken .
  • 1/4 tsp salt .
  • 1 c eggnog .
  • 1 c butter, room temperature .
  • 2 eggs .
  • 1 tbsp cinnamon

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Butter 9 inch fluted or plain tube pan.
  • Step #3 In large bowl of electric mixer, cream butter & sugar until light & fluffy.
  • Step #4 Beat in eggs, eggnog, & vanilla.
  • Step #5 Stir together flour, bakng powder, & salt.
  • Step #6 Gradually beat into butter mixture.
  • Step #7 Prepare topping by combining nuts, sugar & cinnamon.
  • Step #8 Scatter half the topping evenly over bottom of pan.
  • Step #9 Spoon in half batter.
  • Step #10 Add remaining topping & spoon on remaining batter.
  • Step #11 Bake 50 to 60 min, or until toothpick inserted in center comes out clean.
  • Step #12 Cool 15 mins before removing from pan.
