Crostoli Pastries Recipe

Ingredients
  • vegetable oil for frying
  • confectioners' sugar
  • 1 (5 oz) can evaporated milk
  • 3 large eggs, room temperature
  • 2 tbsps rum (optional)
  • 3 1/2 c all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1 1/2 tbsps sugar

Directions
  • Step #1 With an electric mixer on high speed, beat together salt, sugar, & eggs until very fluffy.
  • Step #2 Stir in evaporated milk, vanilla extract, & rum.
  • Step #3 Gradually mix in flour; knead well with dough hook until dough begins to blister, about 10 mins.
  • Step #4 (If dough is still sticking to bowl after 5 mins, mix in 2 tbsps of extra flour, 1/2 tbsp at a time.
  • Step #5 ) Remove dough, & cover with plastic wrap; set aside 20 mins.
  • Step #6 Pour oil into a deep fryer or Dutch oven to a depth of 2 inches, & heat over med-heat/flame to 350 degrees F (175 degrees C).
  • Step #7 Separate dough into small portions.
  • Step #8 On a lightly floured surface, roll out dough portions until very thin.
  • Step #9 Cut into long, narrow strips (about 6 inches by 1 inch).
  • Step #10 With a sharp knife, make a slit in the center of each strip, & draw one end through the slit.
  • Step #11 Fry in hot oil until puffy, & very light golden brown, blistered, about 1 to 2 mins.
  • Step #12 Remove to paper towels to cool.
  • Step #13 Sprinkle top with confectioners' sugar.
  • Step #14 Store in an airtight container.
