Citrus Grilled Turkey Breast Recipe

Ingredients
  • 1 medium orange, thinly sliced
  • 1 tbsp cornstarch
  • 1 c orange juice
  • 2 tbsps water
  • 1/4 c fresh basil leaves
  • 1/4 tsp pepper
  • 3 tbsps butter
  • 1 medium lemon, thinly sliced
  • 1 tsp grated lemon peel
  • 1/2 tsp salt
  • 4 cloves garlic, halved
  • 1/4 c fresh parsley sprigs
  • 1 (4 lb) bone-in turkey breast
  • 1 tsp grated orange peel

Directions
  • Step #1 Using fingers, carefully loosen the skin from both sides of turkey breast.
  • Step #2 In a food processor/blender or mixer, butter, basil, mix the parsley, garlic & salt; cover & process until smooth.
  • Step #3 Spread under turkey skin; arrange lemon & orange slices over herb mixture.
  • Step #4 Secure skin to underside of breast with toothpicks.
  • Step #5 Coat grill rack with nonstick cooking spray before starting the grill.
  • Step #6 Prepare grill for indirect heat, using a drip pan.
  • Step #7 Place turkey over drip pan.
  • Step #8 Grill, covered, over indirect medium heat for 1-1/2 to 2-1/4 hrs or until a meat thermometer reads 170 degrees F & juices run clear.
  • Step #9 Cover & let this stand for 10 mins.
  • Step #10 Meanwhile, pour pan drippings into a measuring c; skim fat.
  • Step #11 In a saucepan, mix the cornstarch & water until smooth.
  • Step #12 Add the orange juice, lemon peel, orange peel, pepper & pan drippings.
  • Step #13 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #14 Discard the skin, lemon & orange slices from turkey breast.
  • Step #15 Remove herb mixture from turkey; stir in theto gravy.
  • Step #16 Slice turkey & serve this with gravy.
