Roasted Garlic And Buttermilk Salad Dressing Recipe

Ingredients
  • pepper .
  • 2 heads garlic .
  • 3/4 tsp worcestershire sauce .
  • 1 c mayonnaise .
  • 2 tbsps fresh lemon juice .
  • 1/2 c buttermilk .
  • salt .
  • 2 tbsps olive oil .
  • 7 tbsps freshly grated parmesan cheese

Directions
  • Step #1 Preheat oven to 400°F Cut top 1/2 inch off heads of garlic, exposing cloves.
  • Step #2 Place each on square of foil wrap.
  • Step #3 Drizzle with oil, then enclose in foil wrap.
  • Step #4 Place on oven rack; bake this until garlic is tender, about 45 mins.
  • Step #5 Open foil wrap; cool garlic slightly.
  • Step #6 Hold 1 head of garlic, cut side down, over medium bowl & squeeze, releasing roasted garlic pulp into bowl.
  • Step #7 Repeat with remaining garlic.
  • Step #8 Mash until smooth.
  • Step #9 Whisk in mayonnaise, buttermilk, Parmesan cheese, lemon juice, & Worcestershire sauce.
  • Step #10 Spice up to taste with salt & pepper.
  • Step #11 Cover up & chill until ready to use, up to 2 days.
