1/2 c chunky peanut butter or smooth peanut butter .
1 tsp maple extract or vanilla .
1/4 c Crisco shortening or Butter Flavor Crisco .
1/2 c brown sugar, packed .
3/4 tsp baking soda .
1/4 c finely sliced peanuts (optional) .
1/2 tsp baking powder
Directions
Step #1 In a large bowl mix together both sugars, butter, peanut butter, shortening, egg & maple extract using an electric mixer on medium speed until well mixed.
Step #2 In a small bowl mix together flour with baking soda, baking powder & salt; add to the creamed mixture until well mixed.
Step #3 Add in peanuts and/or mini chocolate chips (if using) mix to mix.
Step #4 Cover up tightly & put in the fridge for a minumum of 2 hrs or up to 24 hrs.
Step #5 Heat oven to 375 degrees.
Step #6 Grease a large cookie sheet/s.
Step #7 Shape the dough into about 1-1/4-inch balls.
Step #8 Place about 3 inches apart on cookie sheet.
Step #9 Flatten in a crisscross pattern with a fork dipped into sugar.
Step #10 Bake about 8-10 mins or until light golden brown.
Step #11 Cool for about 5 mins then remove to a wire rack to cool.
