Peanut Butter Cookies Recipe

Ingredients
  • 1/4 c butter, softened .
  • 1 egg .
  • 1/4 tsp salt .
  • 1 1/4 c all-purpose flour .
  • 1/2 c white sugar .
  • 1/4 c mini chocolate chips (optional) .
  • 1/2 c chunky peanut butter or smooth peanut butter .
  • 1 tsp maple extract or vanilla .
  • 1/4 c Crisco shortening or Butter Flavor Crisco .
  • 1/2 c brown sugar, packed .
  • 3/4 tsp baking soda .
  • 1/4 c finely sliced peanuts (optional) .
  • 1/2 tsp baking powder

Directions
  • Step #1 In a large bowl mix together both sugars, butter, peanut butter, shortening, egg & maple extract using an electric mixer on medium speed until well mixed.
  • Step #2 In a small bowl mix together flour with baking soda, baking powder & salt; add to the creamed mixture until well mixed.
  • Step #3 Add in peanuts and/or mini chocolate chips (if using) mix to mix.
  • Step #4 Cover up tightly & put in the fridge for a minumum of 2 hrs or up to 24 hrs.
  • Step #5 Heat oven to 375 degrees.
  • Step #6 Grease a large cookie sheet/s.
  • Step #7 Shape the dough into about 1-1/4-inch balls.
  • Step #8 Place about 3 inches apart on cookie sheet.
  • Step #9 Flatten in a crisscross pattern with a fork dipped into sugar.
  • Step #10 Bake about 8-10 mins or until light golden brown.
  • Step #11 Cool for about 5 mins then remove to a wire rack to cool.
