Herb Crusted Roast Pork Recipe

Ingredients
  • 2 tbsps apricot jam .
  • 2 lbs pork loin, skin & fat cut off .
  • 2 tbsps olive oil .
  • 1 tbsp thyme (or leaves from 3 sprigs fresh) .
  • 2 oz porridge oats .
  • 2 oz fresh breadcrumbs (dried may be used) .
  • salt & pepper, to taste

Directions
  • Step #1 Preheat oven to 200C/400°F.
  • Step #2 Brush the jam all over the pork loin.
  • Step #3 In a shallow dish, mix together the breadcrumbs, oats & thyme.
  • Step #4 Roll the pork in the mixture to cover it & place the pork into a baking dish.
  • Step #5 Press any excess breadcrumb mixture over the pork that may have fallen off.
  • Step #6 Drizzle with the olive oil & season this with salt & pepper.
  • Step #7 Roast for 1 1/4 hrs until cooked through.
  • Step #8 Leave to rest, uncovered for 10 mins.
  • Step #9 Slice & serve.
