Step #2 In a large bowl, parsley, cheese, salt, stir this together the bread crumbs, eggs, sun-dried tomatoes, milk, & pepper.

Step #6 Using the parchment paper, wrap the pancetta up & around the turkey loaf to cover completely.
Step #7 Squeeze the parchment-covered loaf with your hands to secure the pancetta & solidify the shape of the loaf.
Step #8 While still covered in parchment, bake the loaf until the internal temperature reaches 165 degrees F on an instant-read thermometer, about 45 mins.
Step #9 Remove from the oven & let cool.
Step #10 In a mixer, mix the arugula & the mayonnaise & process until smooth.
Step #11 Store in the refrigerator until ready to serve.
Step #12 To make the sandwiches, slice the rolls & spread with the arugula mayonnaise.
Step #13 Slice the turkey meatloaf & place on the rolls to make sandwiches.
