Texas Chili Recipe

Ingredients
  • 2 tbsps cornmeal .
  • 4 tbsps hot chili powder .
  • 3 tbsps oil .
  • 2 large onions, sliced .
  • 2 tbsps salt .
  • 2 tbsps hot paprika .
  • 1 tbsp oregano .
  • 3 tbsps cumin seeds .
  • 4 lbs beef chuck, cut in 1/2 inch cubes .
  • 4 garlic cloves, minced .
  • 2 tbsps mild chili powder

Directions
  • Step #1 Cut meat into ½ inch cubes.
  • Step #2 Toast seeds over high heat in a heavy skillet for 2 to 3 mins.
  • Step #3 Remove from heat & set aside.
  • Step #4 Heat 2 tbsps oil in Dutch oven.
  • Step #5 Cook onions & garlic 3-4 mins until softened.
  • Step #6 Remove & set aside.
  • Step #7 Heat remaining tbsp of oil in a pot; add meat & brown quickly over medium high heat.
  • Step #8 Add to dutch oven with onions & garlic.
  • Step #9 Mix well.
  • Step #10 Lower heat to medium.
  • Step #11 Sprinkle top all seasonings into pot & stir until meat is well coated.
  • Step #12 Add enough water to cover.
  • Step #13 Simmer uncovered 1 ½ to 2 hrs or until the meat is tender.
  • Step #14 Continue to add water if necessary.
  • Step #15 Once cooked, mix cornmeal with enough water to make a paste, if sauce is too thin, stir in the & cook 10 mins longer.
