Slow Cooked Italian Stew (crock Pot) Recipe

Ingredients
  • 1 garlic clove, finely minced .
  • 1 (9 oz) package cooked spicy chicken sausages, sliced .
  • 2 (14 1/2 oz) cans Italian stewed tomatoes .
  • 2 carrots, thinly sliced .
  • 1 (8-10 oz) boneless skinless chicken breasts, cut into 3/4 inch cubes .
  • 1 green pepper, seeded & vertically cut into 1/2 inch thick slices .
  • 1 (14 1/2 oz) can cannellini beans, rinsed & drained (use another white bean if desired) .
  • 1 large zucchini, halved & cut into 3/8 inch thick pieces .
  • 2 tbsps fresh basil, sliced .
  • 1/2 large yellow onion, thinly sliced .
  • 1 1/2 c fat free chicken broth (can use boullion & water) .
  • 1/4 tsp dried rosemary, crushed .
  • 1/4 tsp dried oregano

Directions
  • Step #1 Coat slow cooker (aka crockpot) with a light layer of cooking spray.
  • Step #2 Add carrots & onions.
  • Step #3 Top with chicken cubes & chicken sausage.
  • Step #4 Top with peppers & zucchini.
  • Step #5 Mix together the tomatoes, rosemary, broth, garlic & oregano.
  • Step #6 Pour on top of ingredients in the crockpot.
  • Step #7 Cook on high for 3 to 4 hrs or low for 6 to 7 hrs.
  • Step #8 Vegetables should be tender & chicken cooked but not falling apart.
  • Step #9 Turn cooker to high & stir in the cannellini beans & re-cover slow cooker (aka crockpot).
  • Step #10 Cook & extra 10 to 15 mins until beans are heated through.
  • Step #11 Laddle stew into bowls & garnish with basil.
