Ingredients
  • 1 c lowfat parmesan cheese, shredded .
  • 1/2 c green onions, sliced .
  • 4 lbs potatoes, cut into 1/4 inch slices .
  • 250 g ham, sliced .
  • 450 ml light sour cream

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Spray 13 x9 inch dish with cooking spray.
  • Step #3 PLace potatoes in large sacuepan; cover with water.
  • Step #4 Bring to boil on high heat, reduce to low heat & cover.
  • Step #5 simmer 10 -12 mins or until tender.
  • Step #6 Drain potatoes.
  • Step #7 Return potatoes to saucepan.
  • Step #8 Transfer 1/4 of the potatoes to a large bowl, add sour cream; mash with potato masher.
  • Step #9 Add cream cheese, ham & green onions & mix lightly.

  • Step #11 Stir carefully, spoon into prepared baking dish & sprinkle with parmesan cheese if desired.
  • Step #12 Bake 30 mins or until heated through.
