Moroccan Couscous With Chicken N Chickpeas Recipe

Ingredients
  • 2 c dry couscous .
  • 1 tsp coriander .
  • 1/2 c fresh parsley, minced .
  • 1/2 tsp cayenne pepper .
  • 4 c boiling water .
  • 2 garlic cloves, minced .
  • 1 (440 g) can chickpeas (garbanzo beans) .
  • 1 tsp paprika .
  • 1 tbsp cumin .
  • 3 spring onions, finely sliced .
  • 2 c shredded cooked chicken .
  • 2 tbsps olive oil .
  • 1/4 c fresh lemon juice

Directions
  • Step #1 Pour boiling water over the couscous in a heat-proof bowl.
  • Step #2 Let stand for 5 mins until the water is absorbed, cool slightly.
  • Step #3 Add chicken,chickpeas, parsley & spring onions.
  • Step #4 Combine remaining ingredients in another bowl & pour over the couscous salad.
  • Step #5 Serve at about room temp or put in the fridge until ready to serve.
