Dijon Crusted Chicken Recipe

Ingredients
  • oil (for frying) .
  • pepper .
  • 3/4 c panko .
  • 1 tsp tarragon .
  • 1/4 c Dijon mustard .
  • garlic salt .
  • 2 boneless skinless chicken breasts

Directions
  • Step #1 Preheat oven to 425F degrees.
  • Step #2 Rinse chicken & pat dry.
  • Step #3 Pound with a meat mallet between layers of plastic wrap to flatten slightly.
  • Step #4 Lightly season this with garlic salt & pepper.
  • Step #5 Stir together mustard & tarragon & spread on both sides of chicken.
  • Step #6 Dip into bread crumbs, pressing to coat well.
  • Step #7 Heat 1/2 inch of oil in a medium ovenproof skillet until very hot.
  • Step #8 Cook chicken for about 2 to 3 mins per side or until golden brown.
  • Step #9 Place skillet in oven & bake for 5 mins more or unitl chicken is cooked through.
