Brown Sugar Rhubarb Pie Recipe

Ingredients
  • 3 egg whites .
  • 6 tbsps granulated sugar .
  • 1/2 tsp vanilla .
  • 1/4 c all-purpose flour .
  • 1 unbaked 9 pastry shells .
  • 1/4 tsp cream of tartar .
  • 4 c rhubarb, cut in 1/2-inch slices .
  • 1/4 tsp salt .
  • 1 c packed brown sugar .
  • 1 tbsp lemon juice .
  • 2 egg yolks, beaten

Directions
  • Step #1 In bowl, flour, mix brown sugar, & salt; stir in the rhubarb.
  • Step #2 Let stand 15 mins.
  • Step #3 Combine egg yolks & lemon juice; stir in theto rhubarb mixture.
  • Step #4 Turn into unbaked pastry shell.
  • Step #5 Bake at 400° F for 20 mins.
  • Step #6 Reduce heat to 350° F, continue baking till knife inserted off-center comes out almost clean, about 20 mins (cover edges with foil wrap if necessary).
  • Step #7 Beat egg whites with vanilla & cream of tartar till soft peaks form.
  • Step #8 Gradually add granulated sugar, beating till stiff peaks form.
  • Step #9 Spread over hot filling, sealing to the edge.
  • Step #10 Bake at 350° F till meringue is golden brown, 12 to 15 mins.
