Almond Biscotti Recipe

Ingredients
  • 1/2 tsp almond extract .
  • 2 tsps vanilla .
  • 1 egg white, lightly beaten .
  • 2 eggs .
  • 2 tsps baking powder .
  • 1/3 c butter, melted .
  • 3/4 c granulated sugar .
  • 1 1/2 tsps grated orange rind .
  • 1 1/2 c all-purpose flour .
  • 3/4 c whole unblanched almonds

Directions
  • Step #1 Combine flour, baking powder & almonds.
  • Step #2 In separate bowl, & grated orange rind; stir in theto flour mixture until soft, sugar, butter, vanilla, almond extract, whisk together eggs, sticky dough forms.
  • Step #3 Transfer to lightly floured surface; form a smooth ball.
  • Step #4 Divide dough in half; roll each into 12 inch long log.
  • Step #5 Transfer to ungreased baking sheet.
  • Step #6 Brush tops with egg white; bake in 350 degree oven for 20 mins.
  • Step #7 Remove from oven & let cool on pan on rack for 5 mins.
  • Step #8 Transfer each log to cutting board.
  • Step #9 Cut diagonally into 3/4 inch slices.
  • Step #10 Stand cookies upright on baking sheet; bake for 20-25 mins longer until golden.
  • Step #11 Transfer to rack & let cool.
  • Step #12 makes about 24 cookies.
  • Step #13 I like to dip my finished biscotti into very good chocolate or white chocolate as a special treat.
  • Step #14 Biscotti can be stored in airtight container for up to 2 weeks.
